Las Vegas producer IndescribableINDY stops by CHEF TALK to discuss the Sabór series, his creative process, and the infamous unreleased folder.
Chef Talk: Peace Peace G. Welcome to CHEF TALK - is a conversation with the artists, DJs, and producers cooking up the next wave of independent music. We talk about influences, process, inspiration, records, and everything happening behind the scenes.
Kicking off the first question - How are you doing G? Introduce yourself and tell us where you're from.
INDY: Yo what up! I'm Indy also IndescribableINDY but Indy for short! born n raised in Las Vegas but momentarily living in Germany for these next few years and aye I appreciate ya having me here salute!
Been alright just still learning things culturally while being out here with my wife, but so far life has been pretty smooth just working on my mental n physical state and other things as well.
Chef Talk: I feel that. One day at a time. Have you had the chance to peep the hip hop scene out there?
INDY: Handling biz slowly but surely for sure. I aint really peeped the scene here in Germany at the moment, but was able to scope out Paris and London was grateful to throw a few sets out there big ups to LemyLeopard who hosts Beastival and my guy DustyOhms over in London who's the founder of LoopSessionsLDN. Hoping to rock a few more when the opportunity arises and just experience more beat / Hip-Hop shows. I will say though Germany got a scene I just aint had the chance to peep yet.

Chef Talk: Now this year.. you put out Sabór II and III and I'm a stan for flip tapes. Dope series G. What's the inspiration behind the series? That Bobby V flip on III is fucking crazy!
INDY: Yeah I wasn't too crazy with flips tbh, but been a minute I aint put together some releases like that and just really whole lot of influences from Knxwledge's flips, Swarvy, Tuamie, Ahwlee the list can go on from those who got they flip game right haha. The name tho translates to " flavor " wanted to give the audience some sort of flavor I guess I can say just have different kinda beats flowing with certain acapellas I felt was right not just randomly sometimes I'll be humming someones vocals, but yeah that's pretty much to it and the artwork too got some " flavor " influence to em s/o to the homies who've worked with me on the collage work Weirddough, Coyanoah, Eddyorbis aka Khadisma.
yeah that Bobby V was cool forgot to mention too most flips I try to involve R&B that's just something I grew up bumping that I was put on from my brothers one of em mainly haha.
Chef Talk: What's your favourite R & B song?
INDY: That's tough man haha! almost gotta think for a sec. If I gotta be completely honest big shouts to the OGs though I would say " Devin Morrison - No " that whole album straight fuego but again I was gettin put onto Ne-Yo, The Dream, Lloyd too many legends lmao! Devin Morrison tho in this new era yeah he workin fr.
Bussin album to be exact my fault.

What does your creative process look like?
INDY: Peace to all R&B artists.
I mainly be using my SP404 SX been rockin with it since like 2015 was doing that strictly, but I been messing with ableton 12 for awhile not really making beats on that specifically just kinda experimenting when it comes to EQing and other tweaking options. I'd say it's a combo of the daw and my sampler now tho oh yeah and I got this novation LaunchPad Mini that was given by my boi Kluse. I like starting with drums make my own loop out of a kit or flip a drumbreak / drum loop whichever I been heavily taking bits off DnB, House, Techno records on YouTube and other pages if anybody aint done this themselves yet please do whole lot of dope drums haha I dont believe in gatekeeping kinda depends maybe haha! After the drums tho just straight choppin to it or looping the joint if the sample flowing right.
Chef Talk: I've been around a lot of producers this year working with them on our YouTube series - Delivery Beats. I find it fascinating that every producer I've met has a different creative process. It's so cool to see you all put a beat together.
How do you know when a track is finished?
INDY: Once I make an edit to throw up on my Instagram be pretty much the end of completing that beat or flip nah but there is more to it. I mean after I finish compressing and EQing my track about two or three times that is all to it then straight into my laptop that beat just joins the rest of the gang that's been brewing inside for months or years haha.
Chef Talk: The infamous unreleased folder..everyone has that folder. lol
How many beats do you have in the unreleased folder?
INDY: And yeah big Luv to everyone in that series beat community never ends but salute to each and every one of em!
From this year so far about 309 of them, but I got some more in my hard drive which I believe is like 1 Terabyte. All I know from the last time I remember from my old laptop I think I had about 800 beats and some of those have been released or eventually archived from my bandcamp or soundcloud. The number up there is not as much as I would expect if that makes sense, but it's up there.
I felt letting them sit in was kinda my new thing, some has been passed onto homies who rap or emcees who've reached out to or I've reached out to just having patience letting them sit tbh (to be honest).
Chef Talk: How's it been a challenge for you to sit with them in today's climate with everyone just dumping out everything to the public?
INDY: I mean everyone is going to do what they are going to do in other words to each their own kinda situation. I was dumping out stuff a bit consistently. Previous years I did have this series called Random Jawn$ but I forgot how many tapes I followed through with em and then eventually just archived them all. Another reason being why I was letting them stack I slowly felt like my own approach to my own sound has been building up. Whatever anyone decides to do, I say keep doing it. It can be a bit overwhelming, but at the same time when I have multiple beats in different folders it also feels rewarding as soon as I get the urge to put something together then search through what I truly appreciate.
Chef Talk: I love your new approach. What’s something people might be surprised to learn about you?
INDY: I didn't really start off with sampling in the early years of making beats when I first started it was all synth and keys or bass line most of my early stuff tho was garbage lmao! I was a 14 year old kid who thought about making movie scoring type beats haha, but yeah I didn't get into the learning of choppin stuff till I was 16. Also if it wasn't for my second oldest brother I probably wouldn't be making beats right now I don't know what I would be doing truthfully all I know is it kept me out of trouble.
Chef Talk: Wow. Talk about your brother for a bit. Did he put the battery in your back? Does he make beats as well?
INDY: Blessings to my big bro! Yeah he doesn't make beats no more he doin well tho and he was making beats and writing years back this was their teen years both my brothers were making stuff. One day he was calling it quits and he was about to sell his laptop and midi keyboard not sure what brought the chances of him asking if I wanted his stuff I may had asked what else he'd do with it, but it then lead into a gift from him and till this day I got my brothers midi M-Audio KeyRig 49 keys chillin in my studio room haha. He and my oldest brother were making different stuff at that time. It was more like southern trap kinda stuff. It was cool. I then fell into a rabbit hole of just discovering stuff on my own. Luv to my brother Julio though it turned from a hobby into a lifestyle of my own. I'm still doing my regular day routine just very grateful for this being my sort of therapy.
Chef Talk: S/O to them. How do they feel about your journey in music?
They both show love and respect, it may not be the kind of style they were growing up to but definitely proud I would say. Big respect to them, wouldn't be no IndescribableINDY if it wasn't for them.

Is there a particular project or medium you're most excited about right now?
INDY: Like off from any artist?
Chef Talk: Yes, and yourself.. Any upcoming releases from you?
INDY: Ah I'd say I'm looking forward to that new Joyce Wrice record this upcoming month. As far as my own releases I gotta update " SABÓR III " with a few new flips, but might be dropping something next few months before the year ends. I got some stuff cookin with some homies: my guy Swipeex, Weirddough, Garçon D'or, the bro Cise Greeny, Pablo Amor. I got some collabs brewin some that had been for a hot minute when the time is right it'll be ready but I got a special solo release hopefully this year or 2027 I'm trying to align some friends / rappers for some LP kinda drop been gettin Luv from some heads I been following through for years, but aint no tellin if ya follow me on bandcamp then you goin see a new release I havent got that promo album drop yet haha.
I'm still working on some DnB / Footwork / Jungle ish off my alias " beatwhos " all I got to share for that for now iykyk.

INDY: I would love to work with Pink Siifu, OliverThe2nd, Jadasea, Mike, Maxo a lot more I can drop but those are one of em ah and BLU absolutely no doubt BLU.

INDY: Self-Luv and whatever mistakes it was that I made during my journey of being a beatmaker or producer is what transitioned my sound in what later became my own for the homies tho or my folks rockin with ya boi I got yall a tiny bit with some sauce I gotchu haha!
